Brussels, Bacon and Balsamic

The Three B’s: Brussels, Bacon and Balsamic – The classic combination of bacon and sprouts is a festive flavour sensation, but with the added twist of balsamic it turns it into a tasty glazed dish that you can eat at any time.   Brussels sprouts are very low in calories and very high in many nutrients, especially fibre, vitamin K and vitamin C.

Ingredients:
500g Fresh Brussels sprouts
240g pack Wiltshire Bacon dry cured rindless bacon
salt and ground black pepper to taste
100ml balsamic vinegar,
Method:
Clean and prepare the sprouts. Cut larger ones in half.
Cut the bacon into cubes/small pieces.
Combine the sprouts and bacon in a wok or cast-iron pan and season with salt and pepper.  To cook stir the pan occasionally for apx 15 to 20 minutes until they are cooked through.   Don’t let them burn but you do want to make sure that both have some colour to them.
Drizzle half the balsamic vinegar over the combination and give it a stir.
Transfer the Brussels, Bacon and Balsamic mix to a serving dish and drizzle the remaining balsamic vinegar over the top to serve.

Alternatively, you can also roast the dish by putting the sprouts and bacon and half the balsamic mix into an oven proof dish and roast at 200C for 20 to 30 minutes.  Remove from the oven and pour the remainder of the balsamic over the top.
