Bacon can be the staple ingredient in so many dishes. With just a few rashers of bacon and the basics from your larder, you will be able to make budget meals that will delight the kids this summer, including our own Bacon Muffins !
Below is an easy recipe to help keep the kids satisfied.
Bacon Muffins – fill them up for the day by serving these at breakfast along with a poached egg. Alternatively serve them when their friends come to lunch and they’ll think you’re the coolest parent.
Ingredients:
Tbsp Olive Oil
Finely diced large onion
Three rashers Rindless Back Bacon
1 medium size potato, peeled and grated
Salt & Pepper
120g self-raising flour
80g cheese grated
1 tsp baking powder
Large egg
30ml milk
Method:
Preheat oven to 180°C /gas mark 4. Grease a 12-cupcake muffin tray and set aside.
Cut the bacon into small pieces. Cook the onion and bacon in the olive oil in a hot frying pan until the bacon is crispy and the onions translucent.
Remove from the heat and mix in the grated potato.
Season mixture well with salt and pepper and set aside.
In a large bowl, sift the flour and baking powder together. Add the grated cheese and the onion, potato and bacon mixture. Mix well with a fork.
In a separate bowl, mix the egg and milk together. Pour into the flour mixture and carefully fold together until all ingredients are wet. ( Don’t over-mix or your muffins wont be light and fluffy)
Spoon mixture evenly into the cake tray and bake for 15-20 minutes.
Leave to cool for 5 minutes before transferring them to a wire rack to cool further.
