This Roast Loin of Pork with Garlic, Rosemary & Sage is a little addition to our recipe to cook a loin. Cooked with the crackling still in place, it makes a very tasty alternative.

Ingredients
3 garlic cloves, a handful of fresh rosemary, fresh sage, pinch black peppercorns and 4 tablespoons good quality oil-olive.
Rinse the herbs, peel the garlic and add to the liquidiser with the oil and black pepper (or pestle and mortar if you have one)
Take a suitable freezer bag to add the Outdoor Reared Pork Loin and pour in the mix, give a good shake and leave in the refrigerator for a few hours.
Remove from the fridge and place in a preheated oven to cook as recommended by us.
