Smoked Middle Bacon can also be referred to as Long Back Bacon in certain parts of the country. Our Middle Bacon comes from the side of the pig and is basically streaky and back bacon together in a single cut. The result is you get longer, larger rashers that are full of intense flavour.
Middle Bacon is harder to come by these days, it is very rare that you will find it in a Butchers or on a supermarket shelf. But don’t let that detract you from the product which is delicious, particularly in a sandwich, because of the mixture of the fat and the back bacon. Perfect cooked under the grill for 6-8 minutes to allow the back bacon to cook whilst the fat crisps nicely.
Smoked Middle Bacon is dry cured the same way that we cure the rest of our Bacon. Using a traditional method that has been around for generations it is then smoked over oak chips. Our smoking process certainly doesn’t use chemical flavourings and colourings, its just naturally smoked over a period of time. It is actually one of the oldest food preservation methods.
