Unsmoked Middle Bacon comes from the side of the pig and is basically a mixture of streaky and back bacon together in a single cut. Our Middle Bacon with the rind on is from outdoor-reared British pigs. Traditionally dry cured for 21 days there is no colouring, water or chemicals added during our process. Just time and traditional techniques polished over the years to produce an amazing bacon with a mouthwatering flavour.
What we refer to as Unsmoked Middle Bacon is regionally also known as Long Back Bacon, or Centre Cut Bacon. It is harder to come by these days so it is very rare that you will find it in a butchers or on a supermarket shelf. But don’t let that detract you from the product which is delicious because of the mixture of the fat and back bacon.
